lemon mini muffins

Never made muffins before xx. From this recipe, I made 24 mini muffins, 12 regular sized muffins then, with the leftover batter, I added frozen blueberries & made 2 lemon blueberry loaves! I made it exactly as written, except that I used half whole multi-grain flour and half all-purpose flour.

Mix 6 cups flour, 4 cups sugar, baking soda, and salt together in a large bowl.

This is definitely a recipe worth saving and sharing! Substituted all the lactose ingredients with lactose-free alternatives and they turned out amazing! For the topping, I mixed brown sugar, white sugar & lemon zest then sprinkled that on top before baking. I have made these muffins a few times i love the simple and easy recipe , and they take no time at all to make, they don’t last long in our house and there is only my husband and me !!! But I have a tree full of lemons and wanted to make something for Easter. Wipe the pan out with a paper towel, spray it with more spray, and repeat with the remaining batter. Just made these for my roommate and her boyfriend and we all loved them! I think it would be better with a little extra lemon zest added also. Tasted great even without the glaze.

WOW, I just made these muffins and they are truly delightful! Your recipes are truly global!! The ones that had the drizzle were definitely better than the ones that did not. These sound delicious! I did make a few changes: I used French Vanilla yogurt instead of sour cream and also added lemon extract. Also, if I have plain or flavored yogurt to use up, I use that in place of the sour cream. We live in tropical north Queensland and big juicy bush-lemons grow wild here. I’m keeping this delicious recipe! Thank you for sharing, and I hope you enjoy your year out . Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or a rubber spatula just until combined. If I ever make them again I think I'll add some more lemon to it; the flavor was rather faint in the final product. Incredibly moist and delicious.

So glad I landed on your website! using large/jumbo cupcake liners, when i halved this recipe I only got 12 muffins out of it. The batter is unbelievably thick so don't think you did anything wrong once you make it. Will definitely try some of your other recipes. my parents love them.im going to use an orange next time. I made them in mini-muffin tins, and ended up with 38 minis.

I love how the muffins are tangy and slightly sweet at the same time! I scaled the recipe to 10 servings and followed exact other than adding dried lemon peel to the crumb topping. I’m having a year out and I’m pretty sure it’s going to mainly consist of me making everything on your blog!!!

By far the best lemon muffins I've ever made. In a small bowl sift the powdered sugar. They don’t even need the glaze. It could be my lemons.

Next time I might add poppyseeds! The muffins were super moist, fluffy, so delicious!

I really like to taste the lemon in a lemon cake/muffin, and with these, you can! Or these cookies. The texture is heavier than a typical muffin but still good.

I sometimes warm the sugar syrup in the microwave a bit to dissolve the sugar, and I always drizzle the muffins while they are still in the pan because this sends the syrup down the sides of the muffin and creates a wonderful experience in your mouth when you finally have a bite! Add the egg, extract, and yogurt and beat again. This one is less bread-like and more cakey because I like my fruit muffins cakey. I substituted the lemon for orange and lime very tasty. Bake for 7 minutes.
